Dice ½ red bell pepper and slice ½ a medium zucchini, or other in-season vegetables. Steam until tender and brightly-coloured, but not wilted. Lightly saute one diced onion in one tablespoon butter or olive oil. Arrange the vegetables in a 9" pastry shell and sprinkle ½ cup freshly-grated Parmesan cheese on top.
