Vegetarian Quiche

Dice ½ red bell pepper and slice ½ a medium zucchini, or other in-season vegetables. Steam until tender and brightly-coloured, but not wilted. Lightly saute one diced onion in one tablespoon butter or olive oil. Arrange the vegetables in a 9" pastry shell and sprinkle ½ cup freshly-grated Parmesan cheese on top. Beat together 5 eggs, 1/2 cup milk, 1/4 teaspoon curry powder, 1 teaspoon salt, and fresh ground pepper to taste. Pour over the vegetables. Bake for 45 minutes at 350F. Cool for at least 10 minutes before serving.
